So…it’s been quite a while! I admit, my drive for food and food-related posting fell to the wayside somewhere between actual life and hustling. Two friends of mine echoed the sentiment that if you want something hard enough, you would do whatever it takes to make it happen. I believe this wholeheartedly…in theory. In actuality, I would rather be sleeping. However, there is hope.

Leftovers? No problem!

So if you’ve been dutifully reading this blog like you should, you already know I don’t waste food. I do sometimes struggle with being creative with the food I do have hence why this Saturday when I found myself with some leftover cooked pasta, a bit of spinach, an end of goat cheese (leftover from my antipasto plate), I was wondering what kind of meal would I make to ensure that all of this would get used and none would spoil and still have a satisfying dish? Goat cheese macaroni and cheese sounds like a plan!
